San Marzano

The classic Italian processing tomato known for its good production and good taste. An entire industry has grown up around processing the “true” San Marzano tomato. Many chefs swear by it. Fruits are medium size averaging 4 oz, with thick walls, not much juice and high levels of pectin for thickening up sauces. The flavor is best when cooked. Fruit hold well on the vine and off.

Story:

This old heirloom has lots of “stories”, like being given to the King of Naples by the King of Peru during the 1770’s. Unfortunately, not true. But it has been grown for a very long time. It is mentioned in the 1894 edition the USDA “yearbook”. And this is after being grown in Italy for a long time before this.
